Le Coq de Pallus

When we think of the great white wines in the Loire valley, we first come to our mind the Chenin blanc grape, Montlouis, Savenierres, Vouvray or Coteau du Layon, but not  Chinon.

Our Coq de Pallus comes from this already mentioned variety, Chenin blanc.

There were only 33 areas of this variety at Domaine de Pallus planted in 1990.  Excellence does not come from just shortage of this variety in Chinon, but also from the precise implantation where Chenin blanc shows all its aromas. It gets unique structure from the plot in the middle of a slope composed of sand over clay.

 

Noble aromas are transmitted from the sand. The clay also provides smooth mouth-feel with no acidity.

Bertrand Sourdais, thoroughly working both on the variety and the soil of his plots, has created the Coq de Pallus, a great white wine with an enormous aging potential.

Pruning system: gobelet
Whole bunch pressing and  three-month barrel fermentation
Bottled the following year after 9 months in barrels (production between 500 and 800 bottles)
